Chef/Owner Dallas Olson began his career as a real “rolling stone” of the food and beverage industry. Working as a traveling chef spending the summer in Alaska cooking at the Hotel and Lodge Resurrection Roadhouse and winters in Utah at The Aerie at Snowbird. These early years cemented his intense passion for food, skilled him in from scratch cooking and technique, and taught him the art of butchery. Over the next few years he worked in a variety of notable Salt Lake kitchens including The Wild Grape and The Grand America where he held the title of Chef De Partie.
In 2012 Dallas started at Finca, a farm-to-table restaurant, eventually becoming Finca’s Chef de Cuisine. It was here that he was able to cultivate his fervent love of rich and diverse ethnic flavors and appreciate the elegance of poor man’s food. The restaurant also introduced him to many local farmers and purveyors of the region, many of whom he forged a friendship with and sources of ingredients for Fácil. In 2015 Dallas became Chef de Cuisine of Pago, A restaurant focused on local artisans and American cuisine, a place where Dallas sharpened his culinary craft creating a daring and unique daily chef tasting menu. The menu was ever-evolving, ever-changing, reflecting the best seasonal ingredients and always paying homage to the local purveyors that had provided the fare.
